The Academy of Nutrition and Dietetics recently shared a great recipe for anyone looking for new nutrient-rich dishes!  Sweet potatoes are full of antioxidants, vitamins, and fiber to support good digestive health.  Celery is known for reducing cancer risk.  The brighter and bolder your bell peppers are, the better.  Dried cranberries bring on the taste but also provide wonderful health benefits, including preventing cavities.  Ginger root has wonderful anti-inflammatory benefits and is known to help with nausea.  With its easy prep, this salad is perfect for upcoming summer events!
